Mary's Super Simple Salsa*

Ingredients

  • 1/2 cup chopped shallot,
  • 1 jalapeno, seeded and coarsely chopped
  • 1 clove garlic, peeled and coarsely chopped
  • 1/2 cup cilantro leaves
  • 1- 15 ounce can diced no added salt fire-roasted tomatoes
  • 1/2 teaspoon salt or as desired
  • 1 tablespoon lime juice or to taste

Preparation

  1. Combine shallot, jalapeno, and garlic into the bowl of a food processor fitted with the steel "S" blade. Pulse food processor to chop ingredients finely. Add the cilantro, tomatoes and salt. Pulse the food processor again to blend ingredients, but still retain their texture. Taste and adjust seasoning with the addition of lime juice and more salt, as desired.
  2. Store in sealed containers in the refrigerator until ready to serve.
  3. Serving Ideas: Vary the flavor by adding 1/4 of the total volume with fresh diced peaches or pineapple. Delicious spooned over shredded chicken, pork or seafood and wrapped into a burrito with diced avocado and pickled onions! Or folded into steamed rice to kick it up a notch!
  4. Notes: Fresh salsa will store in a sealed container in the refrigerator for at least a week! If you don't have a food processor a blender will work. Just pulse the shallots, garlic and jalapeno in a blender with a little liquid from the tomatoes. Transfer to a bowl and add the tomatoes, chopped cilantro and the lime juice. Stir, adjust seasonings and serve.
