Maple and Mustard Roasted Salmon

Ingredients

  • 2 lbs. salmon fillets, divided into 6 servings
  • salt and freshly ground pepper
  • 3 tablespoons maple syrup
  • 1 teaspoon dijon mustard
  • 1 teaspoon curry powder
  • 2 tablespoons pistachio nuts, finely chopped

Preparation

  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. Rinse salmon and pat dry. Sprinkle the salmon with salt and pepper. In a small bowl, whisk together the maple syrup, dijon mustard and curry powder. Pour half of the maple syrup mixture over the salmon and spread it to cover all of the fish. Sprinkle the nuts over the salmon, then pour over the remaining maple syrup mixture. Bake salmon in oven 10-12 minutes or 10 minutes per one inch of thickness. Remove from oven and let rest 5 minutes.
