Kohlrabi and Napa Cabbage Coleslaw with Sesame Vinaigrette

Ingredients

  • 3 tablespoons rice vinegar
  • 3 tablespoons 50% less sodium tamari or soy sauce
  • 1 tablespoon chile-garlic sauce
  • 2 teaspoons honey
  • 1 tablespoon grated orange zest
  • 1/2 cup cilantro, finely chopped, divided
  • 2 tablespoon avocado oil
  • 2 tablespoons toasted sesame oil
  • 1 cup kohlrabi, peeled and cut into matchsticks
  • 3 cups napa cabbage, shredded
  • 1 cup carrots, grated
  • 1 cup snow peas, trimmed and thinly sliced
  • 1/4 cup sliced almonds, toasted
  • 1 tablespoon sesame seeds, toasted
  • Optional: Add mandarin orange slices and/or shredded chicken to make it an asian flavored veggie and chicken salad

Preparation

  1. In a small bowl, whisk together the vinegar, tamari, chili-garlic sauce, orange zest and 1/4 cup cilantro. Slowly whisk in the avocado oil and sesame oil. Set aside
  2. In a large bowl, combine the kohlrabi, cabbage, carrots and snow peas. Add enough dressing to coat and toss gently to mix. Serve topped with almonds, sesame seeds and remaining cilantro.
