Juicy Jerk Chicken Thighs
Ingredients

2 teaspoons ground allspice

2 tablespoons brown sugar

1/2 teaspoon cumin

1/4 teaspoon ground cloves

1/4 teaspoon cinnamon

1 teaspoon salt

1/2 teaspoon ground black pepper

1/8 teaspoon cayenne pepper

1 tablespoon avocado oil
-
2 lbs. boneless skinless chicken thighs
Preparation

Combine all the spices, brown sugar and oil in a large bowl. Preheat a grill pan or outdoor grill to high heat.

Add the chicken to the bowl and rub the spice mixture over the chicken thighs until thoroughly coated(you can prep this a couple of hours ahead of time if needed).

Place the thighs on the hot grill. Cook about 4-5 minutes per side, until the exterior is a very deep, dark brown and the inside in no longer pink(165 degrees). Remove from heat, cover with foil, and let rest 10 minutes. Serve with Grilled Pineapple with Toasted Coconut.
