Honey Preserved Citrus Slices

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup honey
  • 1 star anise
  • 1 cinnamon stick, 3-4 inches long
  • 6 whole peppercorns
  • 4 allspice berries
  • 1/2 teaspoon sea salt
  • 1 pound kumquats, scrubed and sliced into 1/8 inch slices, seeds discarded or use Meyer lemons or clementines

Preparation

  1. Combine all ingredients, except the kumquats, into a medium saucepan and bring to a simmer over medium-low heat, stirring to dissolve the sugar. Add the sliced fruit, stirring gently and simmer for 15-20 minutes. Remove from heat and set aside to cool. Spoon mixture into a 2 cup canning jar or glass container. Seal and refrigerate for at least 3 days or up to 3 months.
  2. Note: If using juicier fruit such as lemons or clementines, pour off liquid and put slices into the storage container. Return the liquid to the saucepan to reduce it by half over medium-low heat. It will be thick and syrupy. Add to the fruit.
  3. The pictured citrus slices were garnished with pomegranate ariels (seeds).
