Herbed Shrimp Skewers

Ingredients

  • MARINADE:
  • 1/4 cup fresh lemon juice
  • 2 teaspoons minced garlic
  • 1/8 teaspoon crushed red pepper flakes - or to taste
  • salt and ground black pepper, as desired
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh oregano, finely chopped
  • 1/4 cup Italian parsley, finely chopped
  • SHRIMP:
  • 1 pound large shrimp, 16-20 in a pound, peeled & deveined
  • 10 small wooden skewers, soaked in water
  • lemon wedges - as a garnish

Preparation

  1. In a medium bowl stir together marinade ingredients. Scoop out 2 tablespoons of the marinade and set aside. Add shrimp to the marinade in the medium bowl and toss to thoroughly coat. Allow to marinate 15 - 30 minutes, stirring occasionally.
  2. Drain skewers and thread two shrimp onto each skewer, with head and tails going in opposite directions.
  3. Preheat pan or grill to medium-high heat. Place shrimp skewers onto grill pan and cook 2 - 3 minutes, turn over and cook an additional 1 1/2 minutes. Transfer to serving dish and spoon reserved marinade over shrimp. Garnish with lemon wedges and serve.
