Herbed Shrimp Skewers
Ingredients

MARINADE:

1/4 cup fresh lemon juice

2 teaspoons minced garlic
-
1/8 teaspoon dried chili flakes or to taste

salt and ground black pepper, as desired

1/4 cup extra virgin olive oil
-
1/4 cup fresh oregano, finely chopped
-
1/4 cup Italian parsley, finely chopped

SHRIMP:
-
1 pound large shrimp, about 20 in a pound, peeled & deveined

10 small wooden skewers, soaked in water
-
2 whole lemons, cut into 10 wedges
Preparation

In a medium bowl whisk together marinade ingredients. Scoop out 2 tablespoons of the marinade and set aside.
Add shrimp to the marinade in the medium bowl and toss to thoroughly coat. Allow to marinate 15 - 30 minutes,
stirring occasionally.

Drain skewers and thread two shrimp onto each skewer, with head and tails going in opposite directions.

Preheat grill to medium-high heat. Grill lemon wedges about 2 minutes on each side or until grill marks appear and the
wedges soften slightly. Transfer lemons to plate and set aside.

Place shrimp skewers onto grill pan and grill 2 - 3 minutes, turn over and cook an additional 1 1/2 minutes. Drizzle
reserved marinade over shrimp and transfer to serving dish. Garnish with grilled lemon wedges and serve.
