Herb Potato Salad with Dijon Vinaigrette

Ingredients

  • 3 lbs. red, small new potatoes(or a combination of red and white)
  • 1/4 red wine vinegar
  • 3 tablespoons whole grain Dijon mustard
  • 2 teaspoons anchovy paste
  • 1/4 cup extra virgin olive oil
  • 6 scallion onions, chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper

Preparation

  1. l. Place potatoes in a large stockpot, and cover with water. Bring to a boil, and cook until the potatoes are tender, about 20 minutes. Drain and allow to cool. When cool, cut the potatoes in half. 2. In a large bowl, combine the vinegar, mustard and anchovy paste. Slowly whisk in the olive oil. 3. Add the potatoes to the vinaigrette, and mix gently but thoroughly. Add in the scallions, parsley and dill. Add the salt and pepper to taste. Toss again to evenly distribute the herbs and spices.
