Heirloom Tomatoes on Grilled Bread
Ingredients

2 slices of whole/multi-grain bread or your favorite bread, cut in half on the diagonal

1/2 avocado, pitted, peeled, and mashed

1/4 teaspoon minced garlic

1 tablespoon fresh lemon juice

pinch of salt, as desired

1 red ripe tomato, preferably heirloom, cut in half, stem removed then sliced 1/4 inch thick into 8 slices

pinch of red chili pepper flakes

1 teaspoon extra virgin olive oil
-
6 fresh basil leaves, finely cut into thin strips
Preparation

Arrange bread slices on a grill pan and toast on both until lightly golden. Allow to cool
on a rack. This can be done on your outdoor grill if it is fired up!

Mash the avocado, add the garlic, lemon juice and season as desired with salt.

Spread 1 tablespoon of the mashed avocado onto each bread slice. Top with 2 slices of tomato. Sprinkle with a few red pepper flakes and season with a dash of salt, if desired. Drizzle each piece with 1/4 teaspoon of olive oil. Garnish with basil and serve.
