Ingredients
- 2 slices of whole/multi-grain bread or your favorite bread, cut in half on the diagonal
- 1/2 avocado, pitted, peeled, and mashed
- 1/4 teaspoon minced garlic
- 1 tablespoon fresh lemon juice
- pinch of salt, as desired
- 1 red ripe tomato, preferably heirloom, cut in half, stem removed then sliced 1/4 inch thick into 8 slices
- pinch of red chili pepper flakes
- 1 teaspoon extra virgin olive oil
- 6 fresh basil leaves, finely cut into thin strips
Preparation
- Arrange bread slices on a grill pan and toast on both until lightly golden. Allow to cool on a rack. This can be done on your outdoor grill if it is fired up!
- Mash the avocado, add the garlic, lemon juice and season as desired with salt.
- Spread 1 tablespoon of the mashed avocado onto each bread slice. Top with 2 slices of tomato. Sprinkle with a few red pepper flakes and season with a dash of salt, if desired. Drizzle each piece with 1/4 teaspoon of olive oil. Garnish with basil and serve.
