Have a Heart Salad*
Ingredients

1 large garlic clove, finely chopped

1/2 teaspoon salt or to taste

1 teaspoon lime zest
-
2 tablespoons fresh lime juice
-
1 teaspoon honey
-
1/2 teaspoon black pepper

1 tablespoons extra virgin olive oil
-
1 small red onions, thinly sliced and soaked in ice water for 15 minutes to mellow the flavor, then drained.

1 cup red cherry tomatoes, cut in half
-
1 cup canned hearts of palm, drained and cut into 1/4 inch slices
-
1 cup artichoke hearts, drained and quartered
-
1 avocado, diced into 1/4 inch pieces
-
1/4 cup Italian flat leaf parsley, chopped
-
6 inner leaves of romaine lettuce
Preparation

In a small bowl, combine the garlic, salt, lime zest, lime juice, honey and pepper. While whisking slowly drizzle in the olive oil. Set aside.

In a large bowl, combine the red onion, cherry tomatoes, hearts of palm, artichoke hearts, avocado and parsley. Add dressing and toss gently to combine. Taste and adjust seasonings.

Arrange the lettuce leaves on a serving platter or 6 individual plates and top with a generous amount of the salad and serve.
