Greek-Style Grain and Bean Salad*
Ingredients

1 tablespoon lemon zest

3 tablespoons lemon juice

2 tablespoons extra virgin olive oil

1/2 cup quinoa, such as red quinoa, cooked according to package directions

9 ounces great northern beans, cooked, or 1-15 ounce can, drained and rinsed
-
1 cup red ripe tomatoes, skinned, peeled, and diced
-
1 cup English cucumber, partially peeled, seeded, and diced
-
1/3 cup kalamata olives, pitted and sliced
-
1/4 cup Italian parsley, chopped
-
2 tablespoons chives, chopped
-
2 teaspoons mint, chopped
-
2 ounces feta cheese
-
Salt and ground pepper, to taste

Preparation

In a medium bowl, combine the lemon zest, juice, and olive oil. Whisk well.

To the same bowl, add the remaining ingredients. Toss well. Taste and adjust seasonings with salt and ground black pepper, if desired. Serve.
