Granola Cookies

Ingredients

  • 1/2 cup coconut oil
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 cup old fashioned oats
  • 1/4 cup unsalted sunflower kernels, toasted
  • 1/2 cup pumpkin seeds, toasted
  • 3/4 cup large coconut chips or flakes
  • 5 ounce dark chocolate (72% cacao) bar, chopped, about 1 cup
  • 1 cup dried tart cherries, chopped

Preparation

  1. Preheat oven to 350 degrees.
  2. Beat oil and brown sugar in a bowl on medium speed until combined. Beat in eggs and vanilla. Add flour, baking soda, cinnamon and salt; beat until combined. Stir in remaining ingredients.
  3. Using a small teaspoon, measure out cookies about 2 inches apart on a parchment lined baking sheet. Bake 8-10 minutes, rotating pans on oven rack after 5 minutes. Bake until the edges of cookies are light brown.
  4. Remove from oven and cool on baking sheet about 5 minutes or until set, then place on a cooling rack.
