Glorious Garden Roll

Ingredients

  • 1 flour tortillas
  • 1/4 cup hummus
  • 1/4 cup cucumber slices
  • 1/4 cup tomato slices
  • 1 tablespoon pitted black olives, such as kalamata, sliced
  • 1/2 cup fresh spinach, thoroughly cleaned and dried
  • 1/4 cup red bell pepper, cut julienne
  • 1/4 cup shredded carrots
  • 2 tablespoons crumbled feta cheese

Preparation

  1. Spread tortilla of choice with the hummus and layer the veggies.
  2. Roll gently but firmly. Wrap in plastic wrap to hold its shape.
  3. Cut in half and serve.
