Glazed Asian Carrots

Ingredients

  • 6 large carrots, cut into bite size pieces on the diagonal
  • 2 tablespoons soy sauce, low sodium
  • 1 tablespoons rice vinegar
  • 1 cloves garlic, minced
  • 2 teaspoons sesame oil
  • 1/4 teaspoon Chinese five spice powder
  • 2 teaspoons fresh ginger, grated

Preparation

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. In a medium bowl, whisk together all of the sauce ingredients. Add the carrots and coat with the soy sauce mixture. Spread carrot and sauce mixture onto lined baking sheet.
  2. Bake for 20 minutes, stirring carrots halfway through. Bake until all sauce is absorbed and carrots are beginning to brown. Remove from oven and let rest 5 minutes
