Gingered Mixed Melons with Mint*

Ingredients

  • 2 cups cantaloupe, peeled, seeded, and cubed
  • 2 cups honeydew melon, peeled, seeded, and cubed
  • 2 cups watermelon, peeled, seeded, and cubed
  • 1 tablespoon fresh mint, finely sliced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1 tablespoon grated ginger root, squeezed to yield 1 teaspoon juice

Preparation

  1. In a large bowl, combine melons and mint. In a small bowl, stir together remaining ingredients. Drizzle over melons and toss gently.
  2. Great served right away or it will hold 1 to 2 days.
