Ginger and Coconut Crab Bites

Ingredients

  • 1 teaspoon olive oil
  • 1 teaspoon fresh ginger root, grated
  • 1 teaspoon minced garlic
  • 1 teaspoon ground coriander
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 3 tablespoons light coconut milk
  • 1 tablespoon finely chopped red chile finger pepper or jalapeno pepper
  • 2 tablespoons scallions, finely chopped
  • 1 cup lump crabmeat

Preparation

  1. In a small saute pan warm the olive oil over medium heat.
  2. Add ginger and garlic and cook until fragrant, stirring constantly, about 1 - 2 minutes.
  3. Stir in coriander then remove from heat.
  4. Add all remaining ingredients except crab meat. Mix well.
  5. Gently fold in crab meat.
