Ginger and Coconut Crab Bites
Ingredients

1 teaspoon olive oil

1 teaspoon fresh ginger root, grated

1 teaspoon minced garlic

1 teaspoon ground coriander
-
1 tablespoon low sodium soy sauce

1 tablespoon lime juice
-
1 teaspoon fish sauce
-
1 teaspoon sesame oil

3 tablespoons light coconut milk

1 tablespoon finely chopped red chile finger pepper or jalapeno pepper

2 tablespoons scallions, finely chopped

1 cup lump crabmeat
Preparation

In a small saute pan warm the olive oil over medium heat.

Add ginger and garlic and cook until fragrant, stirring constantly, about 1 - 2 minutes.

Stir in coriander then remove from heat.

Add all remaining ingredients except crab meat. Mix well.

Gently fold in crab meat.
