Ingredients
- 1 large head of cauliflower, washed, trimmed and cut into bite-sized florets
- 2 tablespoons finely grated fresh turmeric or 1 teaspoon ground
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon maple syrup
- Salt, to taste
- juice from half a lemon
- 1 tablespoon fresh parsley, chopped
Preparation
- Heat oven to 425 degrees.
- In a medium bowl, combine olive oil, maple syrup, turmeric and salt. Add the cauliflower florets and coat thoroughly with olive oil mixture. On a parchment lined sheet pan, arrange the cauliflower in a single, even layer. Roast for 35 to 40 minutes, mixing florets midway through, until lightly browned and tender. Remove from oven and squeeze half a lemon over the cauliflower. Arrange the cauliflower on a large platter and sprinkle the chopped parsley on top. Serve warm or at room temperature.
