Fruitful Bread Pudding


  • 1 cup jumbo mixed raisins
  • 1/2 cup dried cherries
  • 1 cup muscatel wine or other less dry wine such as Moscato, Reisling or Gewurztraminer
  • 1 large Granny Smith apple, peeled,cored and diced
  • 2 large pears, firm-ripe, peeled, cored and diced
  • 1 tablespoon unsalted butter, plus additional for buttering the pan
  • 1/4 cups brown sugar, packed
  • 3 cups fresh bread crumbs from whole grain Engish muffins or multi-grain bread
  • 3 large eggs
  • 2 teaspoons lemon zest
  • 1/4 teaspoon fine salt
  • 4 cups soy milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom


  1. Combine the raisins, cherries, and wine in a shallow container, making sure the raisins are submerged and soak at room temperature for at least 4 hours or overnight.
  2. Melt the butter in a heavy-duty saucepan and add the diced fruit and sugar. Bring to a boil, stirring.
  3. Reduce the heat and simmer, uncovered for about 15 minutes or until fruit is soft enough to mash.
  4. Mash fruit, then continue to simmer until fruit resembles a chunky apple sauce, about 5-10 minutes more. Allow to cool to room temperature.
  5. In a large bowl, stir together the eggs, lemon zest, and salt. Whisk in the milk, vanilla, and cardamom.
  6. Add 2 1/2 cups of the breadcrumbs and allow to soak for at least 10 minutes or up to 1 hour.
  7. Place oven rack in middle position in the oven and preheat oven to 400 F. Butter bottom and sides of a 9 x 3-inch springform pan. Sprinkle bottom of pan with the remaining 1/2 cup of breadcrumbs.
  8. Combine the bread mixture with the soaking raisin and chunky fruit sauce.
  9. Pour into prepared pan and place onto a sheet pan to catch any drips.
  10. Bake in preheated oven for about 1 hour or until pudding is evenly set and lightly golden.
  11. Pudding is best a day after it is made. Serve at room temperature or slightly warmed. Top with a generous dollop of Greek-style yogurt, if desired.
