Fresh and Fabulous Tomato Soup
Ingredients

2 tablespoons extra virgin olive oil

1 medium onion, about 2 cups, diced

4 cloves garlic, crushed

4 pounds, about 8 cups, tomatoes, cored

1 cup vegetable or chicken stock

3 tablespoons long grain white rice

generous pinch sea salt, plus additional salt, as desired

1 teaspoon sugar or agave syrup or more to taste
Preparation

In a non reactive soup pot such as stainless steel or enamel, warm olive oil over medium heat.

Add onions and garlic. Cook, stirring often, until soft but not brown.

Add tomatoes, vegetable stock, rice and generous pinch of salt. Cover and simmer over low heat for one hour.

Remove from heat and puree. Strain through a sieve, pressing on solids, into a clean bowl. Discard seeds and skins.

Season with additional salt, pepper and sugar to taste.

Delicious served hot or cold. Freezes well.
