Fragrant Rosemary Lemon Tea

Ingredients

  • 3 cups water
  • 1/4 cup sugar
  • 2 large sprigs of rosemary plus 4 small sprigs of rosemary for garnish
  • 4-1/4 inch wide strips of lemon peel, remove with a peeler
  • 1/4 cup lemon juice
  • lemon slices, optional, for garnish

Preparation

  1. Measure 3 cups of the water into a non-reactive saucepan. Add the sugar and 2 large rosemary sprigs. Bring to a boil, stirring to dissolve the sugar.
  2. Allow to cool, then strain out the rosemary. Add the lemon juice and reheat if serving hot. Divide the tea into 4 cups and add a strip of lemon zest, garnish with a lemon slice and a small sprig of fresh rosemary. Serve.
  3. Or refrigerate if serving chilled. To serve, pour over ice into four glasses and garnish with lemon zest strips and lemon slices.
