Fabulous Grilled Salmon with Mustard, Dill and Lemon Pepper
Ingredients

1 1/2 pounds salmon fillet, skinned and portioned into 4 servings

2 tablespoons lemon juice

2 teaspoons Dijon mustard

1 teaspoon lemon pepper
-
1/2 teaspoon salt
-
4 tablespoons fresh dill weed, finely chopped

olive oil spray

4 lemon wedges, garnish
Preparation

Preheat the oven to 450 F.

Place the salmon onto a plate
and squeeze the lemon juice over it and all around it. Pour off the juice and pat the salmon dry.

Line grill pan with foil and arrange the salmon on it in a single layer. Spread each salmon portion with 1/2
teaspoon of mustard and sprinkle with the lemon pepper seasoning and sea salt. Top with the fresh dill and
drizzle with olive oil spray.

Bake on the top rack of the preheated oven for approximately 10 minutes. Standard timing for baking fish is 10 minutes per inch of thickness judging
from the thickest part of the fish. Turn oven onto broil mode for an additional 2 minutes of cooking or until the dill
becomes crisp, but not charred.

Serve garnished with lemon wedges.
