Dressing for Thai-Style Rice Noodle Salad with Crunchy Vegetables

Ingredients

  • 2 tablespoons fresh lime juice
  • 3 tablespoons low sodium tamari sauce
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons dark sesame oil
  • 1 tablespoon chili paste, more or less to taste
  • 1 tablespoon minced garlic
  • 2 tablespoons minced ginger
  • 1 tablespoon extra virgin olive oil, grapeseed or peanut oil
  • salt and ground black pepper, to taste

Preparation

  1. In a small bowl combine the lime juice, tamari sauce, vinegar, sesame oil, chili paste, garlic, ginger and olive oil. Whisk well and pour over salad ingredients. Taste and adjust seasoning with salt and pepper and serve.
