Curried Salmon Bites on a Bed of Coleslaw

Ingredients

  • CURRY RUB:
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt or as desired
  • 1/4 teaspoon ground black pepper
  • Pinch sugar
  • SALMON:
  • 24 ounces salmon fillet, skinned
  • SLAW:
  • 3 tablespoons fresh lime juice
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger root, grated
  • 1 teaspoon dark sesame oil
  • 2 tablespoons grapeseed oil or olive oil
  • 2 cups green cabbage leaves, finely shredded
  • 2 cups red cabbage leaves, finely shredded
  • 1 cup shredded carrots
  • 1/4 cup fresh mint, chopped

Preparation

  1. In a small bowl, combine the ingredients for the Curry Rub.
  2. Rinse salmon and pat dry. Place on a broiler pan. Cover salmon with the rub ingredients and set aside.
  3. For the Slaw, in a medium to large bowl, whisk together the lime juice, soy sauce, honey, ginger, sesame oil and grapeseed oil. Add all the shredded cabbage, carrots, and mint. Toss well and transfer to a large serving platter.
  4. Place salmon onto a cutting board, and cut into bite-size pieces. Return to broiler pan and broil the salmon under a preheated broiler for 10 minutes per inch, judging from the thickest part of the fish. No need to turn fish.
  5. With a spatula, place the salmon bites on top of the slaw and serve.
