Cucumber Citrus Punch
Ingredients

1/3 cup sugar

1/3 cup water

12 ounces English cucumber, peeled and chopped

1/3 cup fresh lime juice

1/3 cup fresh lemon juice

2 cups club soda
Preparation

Combine sugar and water in a small saucepan. Stir and bring to a simmer to disolve the sugar. Remove from heat and allow this simple syrup to cool

Cut the peeled cucumber into chunks and place in blender. Blend until very smooth and juicy. Strain juice into a clean pitcher or bowl, pressing on solids with a spoon to extract as much juice as possible. This may also be done in a juice extractor, if desired. Discard solids. You should have about 1 cup of cucumber juice.

Stir the lime juice, lemon juice and simple syrup into the cucumber juice. Cover and chill until ready to serve.

To serve, pour mixture into a pitcher and stir in 2 cups of soda water or sparkling water. Pour into glasses filled with ice and garnish with a thin slice of cucumber, if desired.
