Crisped Pear Wafers with Savory Goat Cheese

Ingredients

  • 3 medium, firm, slightly under-ripe pears (no need to peel or core)
  • 2 tablespoons maple syrup
  • 3 ounces goat cheese, about 1/3 cup
  • 1 teaspoon curry powder, choose one of the lighter blends such as Balti
  • 2 jalapeno peppers, whole, seeded and sliced into very thin slivers for garnish

Preparation

  1. Preheat oven to 210F if using convection or 230F if using conventional oven. Line two sheet pans with lightly oiled parchment paper.
  2. Using one of the easy-to-use, inexpensive, mandolin-type slicers, slice each pear into thin slices, approximately 1/8 inch thick.
  3. Arrange pear slices in a single layer on the prepared pans. Brush each slice with the maple syrup. Bake in preheated oven for 60 minutes, turn slices over and bake an additional 30-45 minutes, rotating the pans from side to side and top to bottom at 30 minute intervals, to promote even dehydration. The slices will become light golden in color. When cool, they will be crunchy.
  4. Allow to cool, then store in airtight containers for up to 2 weeks.
  5. Combine the goat cheese and curry powder and transfer to a zip seal bag. Make a small cut across one of the lower corners of the bag, squeeze the bag and "pipe" the mixture onto each cooled pear wafer. Top with a thin sliver or two of jalapeno pepper and serve!
