Creamy Fresh Tomato One Pot Pasta

Ingredients

  • 12 oz. linguine, spaghetti or other favorite pasta
  • 12 oz. cherry or grape tomatoes, halved
  • 1 medium onion, thinly sliced(about 2 cups)
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 2 sprigs fresh basil, plus torn leaves for garnish
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 1/2 cups water
  • 1/2 cup grated parmesan or pecorino cheese

Preparation

  1. Combine pasta, tomatoes, onion, garlic, red pepper flakes, basil, oil, salt, black pepper and water in a large straight-sided pot or dutch oven. The pasta should lay flat and submerged in the liquid.
  2. Bring to a boil over high heat. Simmer mixture, stirring and turning pasta frequently with tongs or a fork until pasta is al dente and water has nearly evaporated, about 9 minutes. Add the parmesan cheese and stir into pasta until melted into a creamy sauce.
  3. Season to taste with salt and pepper. Divide among 4 bowls and garnish with more basil and parmesan cheese if desired.
