Creamy Cilantro-Lime Dressing

Ingredients

  • 1 cup cilantro leaves, packed
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic, smashed
  • 2 teaspoons honey
  • 1 small lime, juiced
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil
  • salt and pepper to taste

Preparation

  1. Add all ingredients but olive oil, salt and pepper to a food processor or blender.
  2. Blend until creamy and then add olive oil while machine is running. Add more lime juice or water to obtain desired consistency.
  3. Season to taste with salt and freshly ground pepper.
