
Ingredients
- 2 cups fresh or frozen cranberries
- 1-inch fresh ginger root, sliced
- 1 cup filtered water
- 2 tablespoons fresh lemon juice
- sweetener of choice
- cold sparkling water to fill glass
- fresh cranberries or lemon slices for garnish
Preparation
- Add cranberries, ginger and water to a medium saucepan and bring to a boil. Turn down heat, cover and simmer 8 to 10 minutes or until cranberries break down and mixture thickens to a sauce. Stir often. Remove from heat and stir in lemon juice. Set aside.
- In an 8oz. glass, add 2 tablespoons of the cooled cranberry lemon ginger mixture. Add sweetener of choice such as 2 teaspoons of honey and combine. Add ice to glass and fill with sparkling water. and stir. Garnish with cranberries or a lemon slice. Note: Nutrition info. does not include sweetener as choices can vary.
