Corn Relish
Ingredients

1 poblano pepper, seeded and diced

1 red bell pepper, seeded and diced

4 ears of corn, corn removed with a sharp knife

1 tablespoon extra virgin olive oil

1 medium shallot, finely chopped

2 tablespoons basil leaves, chopped

1 tablespoon mint leaves, chopped

1 tablespoon fresh lime juice

salt and ground black pepper, to taste
Preparation

Warm olive oil in skillet over medium heat. Add shallot and stir until softened, but not browned. Add peppers and cook until soft. Add corn kernels and cook 1 - 2 minutes. Add chopped peppers, cook an additional 2 - 3 minutes. Stir in basil and mint.

Remove from heat, add lime juice and season with salt and pepper to taste.
