Ingredients
- The Dressing:
- 1 teaspoon grated ginger root
- 3 tablespoons fresh lime juice
- dash of salt, if desired
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 dash hot sauce
- The Salad:
- 1 cup cherry tomatoes or grape tomatoes, halved or quartered, depending on their size
- 3 cups diced watermelon or more to taste
- 2 tablespoons chives or scallions, finely chopped
- 2 cups watercress sprigs or arugula
- 1 cup red grapes, seedless, cut in half
- 1 tablespoon fresh mint, chopped
Preparation
- In a small bowl, combine the first 6 ingredients to make the dressing. Whisk well and set aside.
- In a serving bowl, combine the remaining ingredients.
- Pour dressing over salad.
- Toss well and serve.
