Cool and Crunchy Vegetable and Fruit Salad

Ingredients

  • The Dressing:
  • 1 teaspoon grated ginger root
  • 3 tablespoons fresh lime juice
  • dash of salt, if desired
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 dash hot sauce
  • The Salad:
  • 1 cup cherry tomatoes or grape tomatoes, halved or quartered, depending on their size
  • 3 cups diced watermelon or more to taste
  • 2 tablespoons chives or scallions, finely chopped
  • 2 cups watercress sprigs or arugula
  • 1 cup red grapes, seedless, cut in half
  • 1 tablespoon fresh mint, chopped

Preparation

  1. In a small bowl, combine the first 6 ingredients to make the dressing. Whisk well and set aside.
  2. In a serving bowl, combine the remaining ingredients.
  3. Pour dressing over salad.
  4. Toss well and serve.
