Chunky Mango Guacamole

Ingredients

  • 1 mango, peeled, seeded and cut into 1/4" dice
  • 1/4 cup shallots, finely chopped
  • 1 tablespoon serrano pepper, finely chopped
  • 1/4 cup fresh lime juice,
  • 2 medium avocados, halved, seeded, peeled and cut into 1/2" dice
  • 1/2 cup lightly packed fresh cilantro leaves with stems removed, then chopped
  • 1/4 teaspoon salt or more to taste
  • 1/4 teaspoon ground black pepper or more to taste

Preparation

  1. In a medium bowl, combine all ingredients. Stir or fold gently to combine. Adjust seasoning as desired.
  2. Cover and refrigerate until ready to serve.
  3. This tastes better when given a few hours to allow the flavors to merge. Stir again before serving.
