Chunky and Chewy Holiday Crunch

Ingredients

  • 6 cups old-fashioned rolled oats
  • 1 cup shredded coconut, unsweetened
  • 1 cup pumpkin kernels, raw shelled seeds
  • 1 cup sliced almonds, raw
  • 1/3 cup extra virgin olive oil
  • 2/3 cup honey
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups dried cranberries
  • 1 cup goji berries
  • 1 cup raisins

Preparation

  1. Preheat oven to 300F. Line two rimmed baking sheets with parchment paper, and lightly oil with olive oil.
  2. In a large bowl, combine oats, coconut, pumpkin seeds and almonds. Stir to combine.
  3. In a small bowl, whisk together olive oil, honey, cinnamon, nutmeg, and sea salt. Pour mixture over dry ingredients and stir well to coat.
  4. Divide mixture between the two prepared baking sheets, spread ingredients and stir well to coat. Divide mixture between the two prepared baking sheets, spread evenly and bake in preheated oven for 30 - 40 minutes.
  5. Rotate pans and switch their positions half way through baking. Remove pans from oven, stir ingredients and allow to cool thoroughly.
  6. Transfer to a large bowl and add dried fruit and toss well. Transfer to airtight container or individual zippy bags. Store at room temperature for up to a month.
