Chicken Salad with Apples and Herbs

Ingredients

  • 1 teaspoon lemon zest
  • 1 Tablespoon lemon juice
  • 2 teaspoons fresh tarragon, finely chopped or 1/2 teaspoon dried
  • 1 Tablespoon fresh chives, finely chopped
  • 2 Tablespoons mayonnaise - your favorite
  • 1 teaspoon Dijon mustard
  • 8 ounces cooked chicken, diced
  • 1/2 cup fennel, diced (about 1/2 bulb, cored)
  • 3/4 cup apple, diced (1 small to medium apple, cored) such as Pink Lady or Honey Crisp
  • Black pepper and salt to taste

Preparation

  1. In a medium bowl, stir together lemon zest, juice, tarragon, chives, mayonnaise and mustard. Add the chicken and mix to coat. Add the fennel and apple and toss to combine.
  2. This salad has a wonderful fresh and crunchy texture. It is delicious in lettuce cups or on toasted whole grain bread. It will hold well in the refrigerator if in a covered dish for up to 4 days.
