Ingredients
- 1 teaspoon lemon zest
- 1 Tablespoon lemon juice
- 2 teaspoons fresh tarragon, finely chopped or 1/2 teaspoon dried
- 1 Tablespoon fresh chives, finely chopped
- 2 Tablespoons mayonnaise - your favorite
- 1 teaspoon Dijon mustard
- 8 ounces cooked chicken, diced
- 1/2 cup fennel, diced (about 1/2 bulb, cored)
- 3/4 cup apple, diced (1 small to medium apple, cored) such as Pink Lady or Honey Crisp
- Black pepper and salt to taste
Preparation
- In a medium bowl, stir together lemon zest, juice, tarragon, chives, mayonnaise and mustard. Add the chicken and mix to coat. Add the fennel and apple and toss to combine.
- This salad has a wonderful fresh and crunchy texture. It is delicious in lettuce cups or on toasted whole grain bread. It will hold well in the refrigerator if in a covered dish for up to 4 days.
