Caramelized Pears with Chocolate Curls
Ingredients

1/2 cup granulated sugar

2 tablespoons granulated sugar

1/4 cup water

2 tablespoons pomegranate vinegar or balsamic vinegar

1 tablespoon fresh ginger root, peeled and chopped

3 Bosc pears, purchased 3-4 days ahead of time to ensure they are ripe

1 tablespoon fresh lemon juice

3 tablespoons brown sugar

1 1/2 tablespoons unsalted butter

1 ounce semisweet chocolate, shaved into curls
Preparation

In a small non-reactive saucepan, combine the granulated sugar, water, vinegar, and ginger. Bring to a boil over high heat, and continue to cook at a lively boil until the syrup is reduced to about 1/2 cup, about 8 minutes, swirling the pan from time to time to blend the ingredients. Strain and set aside.

Meanwhile, peel and halve the pears, and remove their cores. Place pears into a small bowl with the lemon juice to prevent discoloration.

In a skillet large enough to hold the pears in one layer, melt the brown sugar with the butter. Add the pears and cook with the cut side down for 5 minutes, turn and cook an additional 5 minutes. Leave pears in the pan until read to serve.

To serve, fan pear halves and place each in a shallow bowl. Drizzle syrup over pears. Top with chocolate curls.
