Caramelized Oven-Roasted Carrots
Ingredients

3 cups carrots or 1 bunch, peeled and sliced diagonally

1 tablespoon melted butter

1 teaspoon extra virgin olive oil

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper or more to taste

1 tablespoon maple syrup

2 tablespoons Italian parsley, chopped
Preparation

Preheat oven to 425 F.

In a medium bowl, combine the carrots, butter, olive oil, salt, pepper, and maple syrup. Toss well to coat with seasonings. Turn out into the prepared sheet pan and roast in preheated oven for 15-20 minutes or until crisp-tender. Toss with parsley and serve.
