Caramelized Onion Gravy

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 large onions, thinly sliced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 2 tablespoons all-purpose flour
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 4 cups low sodium chicken broth or defatted turkey drippings
  • 1/2 cup dry white wine
  • salt and pepper to taste

Preparation

  1. In a large saucepan over medium heat melt olive oil and butter. Add onions and saute until a rich golden brown, approximately 40 minutes, stirring frequently. Mix in herbs, flour, vinegar, and honey and cook an additional 2 minutes. Add broth or defatted drippings, and wine, stirring, and bring to a boil. Reduce heat and simmer 8 - 10 minutes, stirring occasionally until slightly thickened. Season with salt and pepper to taste
