Caramelized Onion Gravy
Ingredients

1 tablespoon olive oil

1 tablespoon butter

4 large onions, thinly sliced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

1 tablespoon fresh sage, finely chopped

2 tablespoons all-purpose flour

1/4 cup balsamic vinegar

2 tablespoons honey
-
4 cups low sodium chicken broth or defatted turkey drippings

1/2 cup dry white wine

salt and pepper to taste
Preparation

In a large saucepan over medium heat melt olive oil and butter. Add onions and saute until a rich golden brown, approximately 40 minutes, stirring frequently. Mix in herbs, flour, vinegar, and honey and cook an additional 2 minutes. Add broth or defatted drippings, and wine, stirring, and bring to a boil. Reduce heat and simmer 8 - 10 minutes, stirring occasionally until slightly thickened. Season with salt and pepper to taste
