Caramelized Cauliflower Steaks
Ingredients

1 large cauliflower

salt and ground black pepper, as desired

1 large red bell pepper, seeded and cut into 1/2-inch wide strips

1 large yellow onion, sliced

1 tablespoon extra virgin olive oil

4 thyme sprigs

Optional: 1/4 cup Pecorino cheese, shredded or your favorite cheese, such as feta or Parmesan
Preparation

Preheat oven to 425 F. Generously oil a parchment-lined sheet pan with extra virgin olive oil.

Thoroughly wash cauliflower in several batches of clean water. Cut cauliflower in half, trim off greens. Place
each half onto its flat side and cut each half into 1/2-inch steaks. Arrange the cauliflower steaks in a single layer
onto the prepared sheet pan. Season with salt and pepper as desired. Place into the preheated oven. Bake for
15 minutes.

Meanwhile, combine the bell pepper and onion in a bowl with the olive oil. Toss to coat with the olive oil.
Season again as desired with salt and pepper.

When the cauliflower has cooked for 15 minutes, turn the steaks over, then spread the bell pepper and onion
mixture over the cauliflower. Add the thyme sprigs and return to the oven for an additional 15 to 20 minutes.
Rotate the pan half way through the cooking time. When cooked, the cauliflower should be tender and all the
veggies tinged golden brown at the edges as they caramelize.
