
Ingredients
- 1 small clove garlic - finely chopped or grated or pressed
- 2 Tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon anchovy paste or 2 anchovies, mashed
- 1 teaspoon Worcestershire sauce
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon black pepper
- dash of hot sauce such as Tabasco
- 1/3 cup grated Parmesan cheese
Preparation
- In a bowl, whisk together the garlic, lemon juice, mustard, anchovy paste and Worcestershire sauce. While whisking slowly add the olive oil. Seasonn with black pepper and a dash of hot sauce. Add Parmesan.
- Store in a covered container in the fridge for up to 2 weeks. Tastes great with crisp romaine lettuce (with crunchy croutons and extra Parm) for a classic Caesar salad. Also delicious on shredded Brussels sprouts, cabbage or kale. Nice on roasted potatoes and other steamed or roasted veggies.
