Braised Red Cabbage

Ingredients

  • 2 Tablespoons extra virgin olive oil
  • 1 medium red onion, peeled, cut in half vertically, cut into thin strips
  • 2 cloves garlic, finely chopped
  • 8 cups shredded red cabbage (1 medium red cabbage, cored and sliced)
  • 1 medium apple, such as Granny Smith or Honeycrisp, cored and diced
  • 1 Tablespoon packed brown sugar (or honey)
  • 3-4 Tablespoons cider vinegar (or to taste)
  • 1/8 teaspoon ground allspice or cloves
  • 1/4 cup water
  • dash sea salt and black pepper, as desired

Preparation

  1. Warm olive oil in a large saucepan or skillet with lid over medium heat. Add onion and cook about 3 minutes or until slightly softened. Stir in garlic and cook an additional minute. Add cabbage, apple, sugar, vinegar, allspice and water, then stir to combine everything. Reduce heat to a low simmer. Cover and continue to cook for about 30-40 minutes or until the cabbage is tender. Season with salt and pepper as desired.
  2. This easy, colorful, sweet and sour side dish is delicious with your favorite protein such as poultry or pork, or your favorite sausages (very popular in Germany). It is also a great addition to any plate of vegetables. It can be made ahead and will hold, covered in the refrigerator for up to 5 days or can be frozen for up to 6 months. Allow to fully thaw before reheating in a saucepan over medium heat or in the microwave.
