Ingredients
- 2 Tablespoons extra virgin olive oil
- 1 medium red onion, peeled, cut in half vertically, cut into thin strips
- 2 cloves garlic, finely chopped
- 8 cups shredded red cabbage (1 medium red cabbage, cored and sliced)
- 1 medium apple, such as Granny Smith or Honeycrisp, cored and diced
- 1 Tablespoon packed brown sugar (or honey)
- 3-4 Tablespoons cider vinegar (or to taste)
- 1/8 teaspoon ground allspice or cloves
- 1/4 cup water
- dash sea salt and black pepper, as desired
Preparation
- Warm olive oil in a large saucepan or skillet with lid over medium heat. Add onion and cook about 3 minutes or until slightly softened. Stir in garlic and cook an additional minute. Add cabbage, apple, sugar, vinegar, allspice and water, then stir to combine everything. Reduce heat to a low simmer. Cover and continue to cook for about 30-40 minutes or until the cabbage is tender. Season with salt and pepper as desired.
- This easy, colorful, sweet and sour side dish is delicious with your favorite protein such as poultry or pork, or your favorite sausages (very popular in Germany). It is also a great addition to any plate of vegetables. It can be made ahead and will hold, covered in the refrigerator for up to 5 days or can be frozen for up to 6 months. Allow to fully thaw before reheating in a saucepan over medium heat or in the microwave.
