*Big Event White Bean Salad

Ingredients

  • 3 tablespoons red wine vinegar
  • 3 cloves finely chopped garlic
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • 5 cups canned Great Northern beans
  • 1/2 cup diced green onions
  • 1 cup diced celery
  • 1 tablespoon chopped parsley

Preparation

  1. In a small bowl, whisk together red wine vinegar, garlic, olive oil, black pepper, and salt.
  2. In a large bowl, mix beans, green onions, and celery together.
  3. Add red wine vinegar mixture to bean mixture.
  4. Fold chopped parsley into bean mixture.
  5. Season with additional salt and pepper if desired.
  6. Tip: Rinsing the beans with water decreases the sodium.
