Best Bean Burgers

Ingredients

  • 1 1/2 cups black beans, cooked or 1 -14 ounce can, drained and rinsed, divided
  • 1/4 cup rolled oats
  • 1 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper or to taste
  • 2 tablespons lowfat mayonnaise or wasabi mayonnaise
  • 2 tablespoons cilantro, coarsley chopped
  • 2 cups crimini or shiitake mushrooms, chopped
  • salt, as desired
  • 1 tablespoon extra virgin olive oil
  • 4 whole grain burger buns
  • 4 tablespoons salsa
  • 1/2 avocado, mashed

Preparation

  1. Place half of the beans into a food processor with the rolled oats, cumin, and cayenne. Pulse to combine.
  2. Transfer to a bowl and stir in the mayonnaise, cilantro and chopped mushrooms. Add reserved beans and shape into 4 patties.
  3. Season with salt as desired
  4. Heat oil to shimmering in a large heavy-duty skillet over medium-high heat . Add patties and cook until they are crisp and lightly golden brown, turn once, about 5 minutes total.
  5. Serve on buns with salsa and avocado.
  6. Serving Ideas: Add: thin red onion slices, baby spinach or cheese.
