Best Bean Burgers
Ingredients

1 1/2 cups black beans, cooked or 1 -14 ounce can, drained and rinsed, divided

1/4 cup rolled oats

1 teaspoon ground cumin

1/8 teaspoon cayenne pepper or to taste

2 tablespons lowfat mayonnaise or wasabi mayonnaise

2 tablespoons cilantro, coarsley chopped

2 cups crimini or shiitake mushrooms, chopped

salt, as desired
-
1 tablespoon extra virgin olive oil

4 whole grain burger buns
-
4 tablespoons salsa

1/2 avocado, mashed
Preparation

Place half of the beans into a food processor with the rolled oats, cumin, and cayenne. Pulse to combine.

Transfer to a bowl and stir in the mayonnaise, cilantro and chopped mushrooms. Add reserved beans and shape into 4 patties.

Season with salt as desired

Heat oil to shimmering in a large heavy-duty skillet over medium-high heat . Add patties and cook until they are crisp and lightly golden brown, turn once, about 5 minutes total.

Serve on buns with salsa and avocado.

Serving Ideas: Add: thin red onion slices, baby spinach or cheese.
