Berry Yogurt Swirl

Ingredients

  • 1 1/2 cups frozen berry medley, raspberries, blackberries and blueberries
  • 1/4 cup maple syrup or honey
  • 1 tablespoon lemon juice or 2 teaspoons balsamic vinegar can be substituted
  • 1 tablespoon unsalted butter
  • 2 cups Greek nonfat plain yogurt
  • 2 tablespoons maple syrup or honey
  • 4 teaspoons slivered almonds, toasted

Preparation

  1. Combine the berries, maple syrup and lemon juice in a small saucepan and bring to a boil over medium heat.
  2. Reduce heat to low and simmer for 10 minutes or until mixture thickens.
  3. Stir in butter.
  4. Fold the remaining 2 tablespoons of maple syrup into the yogurt.
  5. In four sundae glasses or short, wide glasses: alternate 1 heaping tablespoon of the berries with 2 tablespoons of yogurt, ending up with the yogurt. You should have enough for 4 layers of each.
  6. Top with slivered almonds and serve immediately.
