Baked Blueberry Banana Oatmeal*

Ingredients

  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch of salt, or as desired
  • 3 very ripe bananas, mashed, about 1 1/3 cups
  • 2 cups rolled oats
  • 1 1/2 teaspoons baking powder
  • 1 cup blueberries, fresh or frozen

Preparation

  1. Preheat oven to 350F Spray 8x8-inch baking pan with cooking oil.
  2. In a medium/large bowl whisk together eggs, almond milk, oil, maple syrup, vanilla, cinnamon, salt (optional) and bananas. Stir in the oats, baking powder and blueberries to combine well.
  3. Pour mixture into baking pan. Place in oven and bake for 35 - 40 minutes or until set and lightly brown at the edges. Allow to cool before slicing. When cool cut into 16 2" x 2" squares.
