Awesome Banana Muffins*

Ingredients

  • Meets GI guidelines.
  • 3/4 cup flour, gluten free -or whole grain such as whole wheat pastry flour if desired
  • 3/4 cup almond meal (also known as almond flour)
  • 1/4 cup oat bran
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups mashed bananas, about 3 medium
  • 1/3 cup packed dark brown sugar
  • 1/3 cup nonfat plain yogurt (or non-dairy yogurt)
  • 3 Tablespoons avocado oil
  • 1 teaspoon vanilla
  • 2 large eggs

Preparation

  1. Preheat oven to 400 degrees. Line 12 muffin tins with paper liners or use cooking spray.
  2. Lightly spoon flours and oat bran into measuring cups, level with a knife and place in a mixing bowl. Add baking powder, baking soda, salt and cinnamon - whisk to combine.
  3. In a separate medium bowl, combine bananas, brown sugar, yogurt, oil, vanilla and eggs. Mix well. Fold in flour mixture until just combined. Do not overmix.
  4. Spoon batter evenly into prepared muffin tins and bake for 10 - 12 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Allow to cool on rack.
  5. Feel free to add lightly toasted chopped nuts such as walnuts, pecans, pistachios or macadamia nuts. Dark chocolate chips are good too!
