Avocado Salsa

Ingredients

  • 1/3 cup lime juice
  • 1 1/2 cups avocados, about 2 small, diced
  • 1 cup English cucumber, peeled and diced
  • 2 tablespoons shallot, finely chopped
  • 1 1/2 cups mango, about 1, diced
  • 2 tablespoons jalapeno, seeded and finely chopped or pickled jalapeno
  • 1/3 cup cilantro, coarsely chopped
  • salt and pepper to taste

Preparation

  1. Combine all ingredients for the salsa. Season with salt and pepper to taste.
